Instructions

  1. Prepare Chickpeas: Drain and rinse the chickpeas thoroughly to remove any canning liquid and set them aside for later use.
  2. Sauté Garlic: Mince the garlic and heat 1 tablespoon of avocado or olive oil in a pan over medium heat. Add the garlic and sauté until fragrant and golden brown, taking care not to burn it.
  3. Mix Arrowroot Slurry: In a small bowl, whisk together the arrowroot powder with 2 tablespoons of vegetable broth until smooth and lump-free. Set aside.
  4. Create Sauce Base: Add the toasted sesame oil, tamari or soy sauce, maple syrup, fresh grated ginger, rice vinegar, and the remaining vegetable broth to the pan with the garlic. Whisk these ingredients together until well combined.
  5. Add Thickener: Re-whisk the arrowroot slurry to ensure it’s smooth, then pour it into the pan. Stir continuously to avoid lumps as the sauce begins to thicken.
  6. Simmer Sauce: Cook the sauce over medium-low heat until it starts bubbling gently, indicating it’s thickened enough to coat the chickpeas.
  7. Combine Chickpeas and Sauce: Add the drained chickpeas to the pan and gently stir to coat them with the sticky sauce. Let them cook together for about 5 minutes to absorb the flavors and thicken the glaze.
