Ingredients

Scale

Cheese

  • 8 ounces parmesan cheese, freshly grated

Vegetables

  • 3 medium yellow onions, very thinly sliced (about inch width)

Seasonings & Oil

  • 2 tablespoons avocado oil
  • 2 teaspoons paprika (or to taste)
  • 1 teaspoon coarse sea salt (or to taste)
  • 1 teaspoon garlic powder (or to taste)
  • ½ teaspoon seasoning salt (or to taste)
  • ¼ teaspoon ground black pepper (or to taste)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 400°F (200°C). Line a large rimmed baking pan with parchment paper to prevent sticking and allow for easy cleanup.
  2. Spread Parmesan Layer: Grate 8 ounces of fresh parmesan cheese and spread it evenly in a thin layer over the prepared parchment paper on the baking pan.
  3. Slice Onions Thinly: Using a sharp knife or preferably a mandolin slicer, slice the 3 medium yellow onions very thinly, approximately ⅙ inch wide, to ensure crispiness and even cooking.
  4. Layer Onions on Parmesan: Arrange the thin onion slices in a single layer directly over the grated parmesan cheese on the baking sheet, making sure they do not overlap excessively.
  5. Brush with Oil: Lightly brush the onion slices with 2 tablespoons of avocado oil to help them crisp up and add richness.
  6. Season Onions: Sprinkle the onions evenly with 2 teaspoons paprika, 1 teaspoon coarse sea salt, 1 teaspoon garlic powder, ½ teaspoon seasoning salt, and ¼ teaspoon ground black pepper. Adjust seasoning amounts to taste.
  7. Bake: Place the baking pan in the preheated oven and bake for 25 to 30 minutes, or until the onion rings are golden brown and crispy.
  8. Cool and Serve: Remove from oven and allow the onion ring chips to cool on the pan for about 10 minutes to firm up. Then break them into pieces and enjoy immediately as a crunchy snack.

Notes

  • Using a mandolin slicer will ensure the onions are sliced evenly and thinly, which is key to achieving crispy chips.
  • Adjust the seasoning amounts based on your flavor preference; more paprika for smokiness or extra garlic powder for a bolder bite.
  • Make sure to spread the parmesan thinly and evenly so it crisps up nicely without burning.
  • These chips are best enjoyed fresh but can be stored in an airtight container for up to 2 days. Re-crisp in the oven if needed.
  • Avocado oil is preferred due to its high smoke point but you can substitute with other neutral oils if desired.
